Autumn Glow Harvest Bowl

Recipe (serves 2):

  • 
    
    1 cup roasted butternut squash, cubed
    
    
  • 1 cup roasted Brussels sprouts
  • 
    
    1 cup roasted sweet potatoes, sliced
    
    ½
  • 1/2 cup roasted carrots, cubed
    
  • 
    1 cup steamed broccoli florets
    
    ½ 
  • 1/2 cup shredded purple cabbage
  • 
    
    1 cup cooked lentils (or chickpeas)
    
    ½
  • 1/2 cup farro or quinoa, cooked
    
    
  • 1–2 cups fresh kale, chopped
    
  • 
    Dressing: 2 tbsp tahini, 1 tbsp lemon juice, 1 tsp maple syrup, 1 tsp Dijon mustard, salt & pepper, splash of warm water
    

    Instructions:

  • Roast squash, sweet potatoes, carrots, and Brussels sprouts with olive oil, salt, and pepper at 400°F for 20–25 minutes.
    
  • 
    Steam broccoli until tender but vibrant green.
    
  • Assemble all ingredients in a large bowl with lentils, farro, cabbage, and kale.
    
    
  • Whisk dressing ingredients together and drizzle over the bowl.
