Recipe (serves 2):
1 cup roasted butternut squash, cubed1 cup roasted Brussels sprouts1 cup roasted sweet potatoes, sliced ½1/2 cup roasted carrots, cubed1 cup steamed broccoli florets ½1/2 cup shredded purple cabbage1 cup cooked lentils (or chickpeas) ½1/2 cup farro or quinoa, cooked1–2 cups fresh kale, choppedDressing: 2 tbsp tahini, 1 tbsp lemon juice, 1 tsp maple syrup, 1 tsp Dijon mustard, salt & pepper, splash of warm waterInstructions:
